Ingredients
Dressing
- 1/4 cup extra virgin olive oil
- 4 tbsp red wine vinegar
- 1 garlic clove minced
- 1 tsp dried oregano
- 1/4 tbsp sea salt
- 1/4 tsp ground peper
Salad
- 2 cups halved cherry tomatos
- 1 cucumber seeded and sliced, 1/4 inch
- 6 oz feta cheese
- 1/4 cup thinly sliced red onion
- 1/3 cup chopped green pepper
Instructions
- In a small bowl, whisk together the olive oil, red wine vinegar, garlic, oregano, salt + pepper.
- On a large platter, arrange the green pepper, cherry tomatoes, feta cheese, and red onions.
- Drizzle with the dressing and toss gently.
- Season to taste and serve.
